- 8 whole wheat tortillas
- 1 cup homemade tomato sauce
- 1 ½ cups skin shredded mozzarella cheese
- ¾ cup bacon chopped
- 1 tbsp fresh parsley chopped
Preheat the oven to 400 F.
Lightly grease the 12-cup muffin tin.
Using the cut edge of any can you have in your pantry, cut 3-4 rounds from each tortilla.
Press each round into muffin cups.
Add about one teaspoon of homemade tomato sauce into the center of each tortilla round.
Sprinkle cheese on top, then the bacon pieces.
Bake for 10-12 minutes, or until golden and bubbly.
Remove and cool before transferring the mini pizzas from muffin tin to a serving plate.
Garnish with chopped parsley. Enjoy!

- If you do not have mozzarella, you can use cheddar or parmesan cheese instead.
- Grease the muffin tin generously so the mini tortilla pizzas can slide out when done.
- You can use a large cookie cutter to cut the tortillas if you prefer.
